What's the difference between margin and markup?

Margin is profit as a percentage of the sale price; markup is profit as a percentage of the cost. A $20 profit on an $80 item is a 25% markup but a 20% margin.

Which one should I use for pricing?

Markup is handy for setting a price from a cost; margin tells you how much of each sale is profit. Both are shown so you can pick.

Can margin exceed 100%?

No — margin maxes out below 100% (you can't profit more than the sale price). Markup, however, can exceed 100%.
